Integrated Utilization of Dairy Whey in Probiotic ?-Galactosidase Production and Enzymatic Synthesis of Galacto-Oligosaccharides

This work established an integrated utilization of dairy whey in ?-galactosidase production from Lactobacillus bulgaricus and prebiotics synthesis by the probiotic enzyme. A cost-effective whey-based medium was newly developed for culturing to produce ?-galactosidase. The optimized through response surface methodology (RSM) involving a series statistical designs, such as Plackett–Burman design, steepest ascent experiment, central composite design. Under medium, activity L. reached 2034 U/L, which twice that produced traditional MRS medium. cells harvested were subsequently treated with lysozyme. resulting crude enzyme used efficient catalyst, catalyzed prebiotic galacto-oligosaccharides (GOS) high yield 44.7% using (200 g/L) substrate. sugar mixture further purified activated charcoal adsorption, thereby yielding high-purity level 77.6% GOS.
